Justin Wong

Head Chef

Justin first entered the food industry in 2009, when he started washing dishes part-time while studying at university. Realising he was probably more useful with a knife than a pen, Justin began cooking seriously under the tutelage of Kurt Sampson at both Pata Negra and Propeller.

Since then, he has worked at other esteemed venues in Perth such as Lulu La Delizia and Shadow Wine Bar before taking on his own kitchens at both Tiny’s and Vinotto. Justin joined Millbrook Winery as Head Chef in 2022.

Justin is incredibly passionate about creating dishes from the produce grown on the property’s 90-year-old orchard, as well as making the most of the strong relationships already forged with local artisans. He relishes the challenge of changing the menu not based on trends but on what the garden gives.  

Mitchell Seward

Head Gardener

Mitchell is responsible for growing the produce for the Millbrook kitchen. A passion for sustainable living led him to pursue qualifications in permaculture and horticulture and to develop his skills as a market gardener.

The challenges that come with supplying high quality produce year round, as well the opportunity to grow rare heirloom varieties from saved seed, is what drew him to Millbrook.

Mitchell is proud to work somewhere that shares the same ethics of sustainable food practices and allows him to pursue his passion for market gardening.

John Fogarty

Chief Viticulturist

John has been the Chief Viticulturist for the Fogarty Wine Group since 2002, overseeing the management of the premium vineyards in Western Australia, Tasmania and Victoria, and sourcing fruit from select growers.

John’s interest in planting and training young vines is coupled with an ardent focus on sustainability and innovation. He is constantly looking at ways to increase fruit quality to ensure the Group’s winemakers can create the best wines possible.

John has completed multiple degrees in viticulture and has an unmatched knowledge of each vineyard site.

Emma Gillespie

Senior Winemaker & Cellar Manager

Emma began her winemaking career in 2011 after completing a Bachelor of Viticulture and Oenology at Curtin University. She then gained experience in the United States working for a high-end small-batch producer. In 2017 Emma was appointed Operations Manager and works alongside Chief Winemaker Julian Langworthy to run the winery.

Emma is also making her name in the local judging scene and has been involved with the Perth Royal Wine Awards since 2016. In 2020 she accepted the role of senior judge at the Wine Show of Western Australia.

Emma joined Fogarty Wine Group in 2015 and is she now the Operations Manager for Deep Woods Estate, as well as the Winemaker for Millbrook Winery.

Guy Jeffreys

Millbrook Restaurant Ambassador

Guy had a love of cooking from a young age which inspired him to become a chef and then work in some of WA’s most awarded restaurants, but his desire to work in a restaurant that grows its own vegetables led him to Millbrook Winery in 2010.

Guy introduced his no waste, sustainable food ethos, including growing vegetables from seeds that have been saved from the previous year’s crop – cultivating the true paddock-to-plate philosophy. This approach to food has won much acclaim for the restaurant over the past thirteen years under Guy’s guidance, including a critics choice review in The New York Times, 2 Chef Hats in the Australian Good Food Guide, West Australian Chef of the Year and Gourmet Traveller 2022 WA Restaurant of the Year.

After 13 years, Guy has stepped back from running the kitchen on a daily basis, however his passion for Millbrook will still be in full swing as he takes up as our ambassador, running events and cooking classes throughout the year.

Julian Langworthy

Group Chief Winemaker

Julian is regarded as one of the most talented winemakers in Australia with awards such as James Halliday's Winemaker of the Year, a Jimmy Watson Trophy winner, Ray Jordan's Winemaker of the Year, and a Wine Society Young Winemaker of the Year nominee.

His impressive career has included vintages in France and Canada, as well as senior winemaking roles in the Barossa Valley, Clare Valley and Coonawarra.

Passionate about producing regionally distinctive wines, Julian joined the Group in 2011 and now oversees the Fogarty Wine Group winemaking teams.
