Mid-winter at Millbrook
The winter solstice on 21 June threw us into the thick of the cool, wet months. The Perth Hills are lush and verdant, and in the vineyard our vines have entered dormancy; the leaves have mostly dropped and soon we will begin the important process of pruning.
Our new mid-winter menu started this week, and we are very excited that it is officially truffle season again! Our kitchen team have created a delicious broccoli shoot & rapini risotto, served with mascarpone and black truffle. This dish pairs perfectly with our Single Vineyard Chardonnay.
