The West Australian's food editor Rob Broadfield has scoured the state to compile his list of the 20 top dishes in WA and we are thrilled that a Millbrook favourite made the number one spot. Head Chef Guy Jeffreys' Viognier braised rabbit risotto has long been a star pick from the Millbrook Winery restaurant menu - as Rob Broadfield points out, "there would be a lynching" if we took it off!
As current West Australian Good Food Guide Chef of the Year, Guy's dishes caught Rob's attention for their "wonderful simplicity, technical skill and extraordinary produce". And if that wasn't enough to pique your appetite, Rob's description of the sumptuous rabbit risotto may just do the trick:
"Fennel, bacon, parmesan, butter, rabbit stock, Italian arborio rice and the estate's Viognier wine make the perfect base for Jeffreys' rich and moist braise of bunny, topped with delicate fennel flowers."
